I will exchange lamb chops for access to coarse gold areas

Now that's an offer I love my chops :Y: but I'm looking for the gold as well, looks like the chops will have to do till I find it

Love curly lamb chops, problem I have up here, is fly's!
No fly's until I start cooking lamb, then hundreds of the buggers!

While out detecting and not having much luck I found a huge patch of puha but I never had a plastic bag so I kept walking.
Not too far from the patch I said I wish I had a bag and waddya know a huge bag was lying not too far off and tonight's dinner.....Boil Up MMMMM

Chops, Potatoes, Puha, Doughboys/Dumplings without the Baking Powder all boiled in the one pot.... MMMMM

Best source of Iron (Puha) mmmmmm :Y:

A few recent efforts.

Red emperor, with seared scallops and crispy fried calamari and prawns, with a dill veloute sauce.

Veal osso bucco cooked in bianco (with no tomato) on a bed of saffron risotto, and with gremolata on top. Gremolata is a mix of Parmesan cheese, parsley, and grated lemon rind, and it is great on this dish. Veal was very young and pale, and this dish is one of my favorite things to eat in winter.

Did an overnight smoke of a shoulder of mutton. I have been wanting to cook this up for a while as it's a homegrown one from the farm, that we butchered a few months ago. :p

Kept it simple with S & P, garlic, onion, sumac, rosemary and a little smoked paprika for the rub. A few tasty anchovies placed on top and it was good to go.
Used red wine, red wine vinegar and chicken stock in the pan and smoked it over some ironbark chunks for a few hours.

Then I sat it in the pan with the reduced stock and let it cook until it was internal 93 C (14 hours at 110 C).

Into the heated esky for a 5 hour rest and it looked like this:

Gave the new Aldi "claws" their first victim and it turned into this:

Well, after all that it turned out........Tasty!!!! :p
Plenty left for a Shepherds pie
Chicken thighs on the Dragon now as she's only been chugging away for 24 hours and it seemed a shame to close her down O:)

Cheers,
Billy.
