I literally slaved over this meal tonight.


Potato meat pie and some peaches and custard for desert, to be followed by a few Iron Jack beers. Life is so hard sometimes
Just have to put it in the air fryer now and dig in.

My partner and I are staying up the coast in the Valla area and drove over to the Dorrigo national park a few days ago. Wow what a place!
On our way back we stopped in at Bellingen and picked up some tasty Bangalow pork from Thorns.
This pork is sensational and I highly recommend trying it if you can find some in your area.

I fired up the mighty Jumbo Joe and put some Dorrigo spuds, local garlic and onion in the tray below the meat.
About an hour and a half later it was done.
We had some other veges and of course gravy made out of the drip pan liquid.
This pork was probably the tastiest Ive ever had and as the website says, it was super sweet.
The smaller piece of crackling was a bit I cut off a sheet about a foot square of crackling that we bought at the same place for $3.50.

Now ya just showing off.

1.8kg roast pork...all that crackle is in my belly lol

First cook in a new oven, 5hrs cook time, turned it up to high at the end.. learning mate... cheers

Hey 20X, edumacate me mate, how do you turn that charcoal cooker up, do you have an air vent or something?
I ask because I have been fascinated by what you blokes cook over the years.
