I call my favourite Mushroom recipe Pancake Parisienne. Wild mushrooms cooked up and placed in a white sauce including Garlic, spring onions in 1/2 inch cuts and some bean shoots all mixed in and added to a standard crepe recipe. Salt and pepper added during cooking to get the full flavour.

It wasn't a very thick steak. 3min each side on a smoking hot cast iron pan, then let it rest for just as long.
 
Tonight in the camper was something a bit special, Venison with couscous, not farmed, wild kill and wow it melted in the mouth, could cut the backstrap with a butterknife!

Local shooter has his own micro butchery, also a meat inspector :power: Unfortunately it is limited supply, but we look out for him at the markets, so much for being a vego... :( but this is pure, unadulterated joy :)

Here is a pic of the chillis. They are dark and have a strong smell that suggests good heat. Kind of smokey actually.

This is the soup, made to Silver's specifications, except I tend to take risks when it comes to chilli, and put in 10 instead of 8.

Sinuses cleared and a good afterburn has established itself in my mouth, nose and sinuses.

Some of my next batch of home made gin cured cold smoked bacon will be on its way in a few weeks.

That chutney was one of the best I've ever had.
That soup might be a good vaccine for Omicron, send some to Greg Hunt and tell him to get ATAGY to give it the go ahead :lol:
