Fired up the Kettle yesterday after it was declared a non fire ban day :clap:
Set up a snake and cooked up some pork belly burnt ends.
We also roasted a bit of corn on the grill and threw that into a salad.
Turned out a tasty feed indeed :p

I've been doing it a bit tough lately and have not been posting much. But things are looking up.

A little porcetta just for me and Jannine. Butterflied pork belly seasoned with sage, rosemary, garlic, parmesan and olive oil.some DOC proscuitto wrapped up with it.

Served with gravy, hassle backs, roast carrots and minted peas on the side.

Did a roast chook on the baby q for tea. Forgot the insta read thermometer in the country so had to go by instinct. I would rather overcook that eat salmonella.
In the end I nailed it. I have ,after all, cooked many many chooks on the q.
Nice crispy skin with moist breast.
No plated shots. We are savages here.

Damn hot today, and worse tomorrow, so I thought a steak on the BBQ would be just the thing.

Seasoned up an 800g tomahawk steak and threw it in the sous vide bath at 57C for 5 hours. Only 17c greater than the outside temp, or 10 C more than the temp in my ute this arvo. Finished on a very hot bbq plate.

Served with a salad of home grown cherry tomatoes, basil and parsley with bocconcini, and washed down with an old fashioned and refreshing Reschs Pilsner. Shared the steak with SWMBO.

I'm supposed to go to Sydney tomorrow, but wonder whether the Hume will be open.

Bit of a weird day here today. What, with looking after kids and a household and all that. Still managed to cook a few things.

First of all I started with the amaranth. Weedy crap that tastes pretty good and is supposedly a super food. But don't tell the hippies that. I remember being so poor that's all we had to eat. Wait! I'm still poor but that's another story.
Smothered with olive oil and fresh garlic with crusty bread it's pretty darn good.

Then I made a very big pot of lentil soup. Haven't had it for a while and I've missed it.

Whilst cooking the lentils I felt like some lamb. Nearly put a leg on, but changed my mind last minute and put on some chicken legs in a honey soy sauce.

I'm pretty full now and looking forward to the leftovers tomorrow.
