I've seen these Murray river crays grow quite big. But I don't think the spikes are appealing to a market.

I think I would be like wrighting a book and it would take a very long time. Best just to chat about it here.

Maybe try a 2nd hand online bookstore for a book called, A salute to the humble yabbie. It's interesting reading on the breeds that are around. Next you would want to select a breed and build your farm.
I'm not interested in the farm bit yet, more the breeding, which can be done in a small lab the size of a backyard shed.
 
I wonder how hard they are to cross breed. Like some cattle farmers breed horns out of there cattle, how hard would it be to breed the spikes out?

Small Yabby and fingerlings cost a fortune. ?
Some farmers don't like yabbys in their dams though,...as, if the wall isn't thick enough, the yabbies can dig their way through and breach the wall,... and the poor old farmer looses a lot of their water. :/
Would be great in most spots though. :D

I like the alpine crays.
Still have the spines. But a completely different color. Taste good too

As for the yabbies I use to get. Think most where smooth cray. As well as leopard cray.
Not sure what type really.
The tackle shop use to get 30 dozen of me a month for bait.

Thanks Parks, they were indeed and who said you couldn't catch yabbies in the middle of winter???

Was drought breaking rain (3 inches) that weekend and bloody cold!

Still able to breed at this stage ;)

Kept our eye in with a few hand thrown clays while the water boiled.

The dam we caught them in was just to the right of shot.

There is (or was?) a yabby farm about half way between Mudgee & Gulgong. From all reports the owner is a nice bloke - he might give you some pointers? My brother used to buy bait yabbies off him when he was living here a few years back. I'm not 100% sure it's still open as a yabby farm as I haven't taken a lot of notice when going past but a Google search seems to indicate it is & also operates as as a B&B.

There's also aquaculture courses that you can do through the DPI or try a web group like aquaculture Australia that often advertise weekend courses.
 
I've cooked them straight on the fire and it improves the flavour of the meat a huge amount.
 
Tried to make a yabby pate a while ago. It was a no go as I used garlic and it just over powered the delicate meat taste.
